Borrowed from New Latin encyclopaedia, a false rendering of Ancient Greek ἔγκυκλος (énkuklos, “circular”) (from ἐν (en, “in”) & κύκλος (kúklos, “circle”)) & παιδεία (paideía, “education”, literally “rearing of a child”), as "an all-around education", but literally "training in a circle". The modern sense was first applied to the French Encyclopédie in the 17th century.
