From the same stem as the verb rūgt (“to ferment, to turn sour, bitter”), of which it is technically the past participle. Cognates include Lithuanian rūgštùs (“sour”); cf. also 17th-century Latvian rūksts (“bitter, sour and bitter”) (= *rūgsts).^[1]
