The following is (eventually) a full list of Cancelled Products for White Wolf's various game settings over the years.
Magazines
By the month of December, 1994, White Wolf Magazine rebranded to White Wolf Inphobia. It shifted its main focus away from role-playing games to being an all-media magazine. Certain subscribers didn't like the move and the July 1995 issue became the last issue of the magazine. Two more issues were planned before the magazine's cancellation.

Books
Ars Magica
Ars Magica has quite a bit of Cancelled Products for its setting due to various mishaps and events.
Shining Armor was an attempt to make linked companion settings to Ars Magica, which the gimmick would be later used for WOD. Inferno was an attempt to bring Ars Magica in the modern world where you played in Purgatory, but the sole manuscript was destroyed in a transformer explosion. While the project was deemed cursed, it seems that the ideas from Inferno might have been repurposed for Wraith: The Oblivion and Demon: The Fallen.
Atlas Games lost the license at the time for Ars Magica and wasn't able to make Stalenric or The Fallen Angels. It wouldn't be until they bought the game off from Wizards of the Coast, that they could make Ars Magica books again.
And when Wizards of the Coast bought Ars Magica from White Wolf in 1993, they didn't finish the planned Stonehenge or Dawn of Darkness books when they had the license.

Werewolf: The Wild West
Werewolf: The Wild West was made during bad timing, as Deadlands by Pinnacle Entertainment Group came out a year before it did. And proved to be the more popular Weird West setting despite a dime novel crossover between the two. While it was moved to ArtHaus Publishing, the imprint only managed to put out one Wild West book.
