Étymologie
- Du vieux slave čьrstvъ qui donne czerstwy (« dur, rassis ») en polonais, чёрствый (ru) (id.) en russe, čvrst (« solide ») en slovène, il s'est dit tout d'abord du pain avec deux évolutions antonymiques entre le tchèque et les autres langues slaves : « dur, dur à croquer, rassis » chez les uns, « dur, croquant, frais » chez les autres.
- Plus avant, il pourrait être lié au radical indoeuropéen *kert- qui donne le latin crassus (« dru, épais »).
